the tea, the story.

This is the farm's light roast, roasted by hand in a pan rather than in a drum roaster, so the farmer can stop the moment the leaf turns golden. The result keeps half of the green tea's freshness and adds half of hojicha's warmth: a pale amber cup that is both grassy and toasty, with low caffeine and no bitterness. It is the hojicha for people who love green tea.

Roasted by hand, stopped on time

Machine roasting runs on a timer. Hand roasting runs on sight and smell: the farmer moves the leaf in a hot pan and pulls it the moment the colour and aroma are right. Because the leaf is first-flush spring Yabukita rather than coarse autumn leaf, it needs only a light touch. Spring picking has another advantage on a farm that uses no pesticides: the weather is still cool, so there is little pest pressure.

Taste

Toasted hazelnut and warm hay over a clear green-tea sweetness, light body, very clean finish. Lighter and brighter than our strong roast, and less smoky.

How to brew

Hot: 3 g per 200 ml at 80–90 °C for 45–60 seconds; re-steep twice. Slightly cooler water than for the strong roast keeps the green side alive. Cold brew: 5 g per litre, 6–8 hours in the fridge.

Good to know

50 g is about 16 pots. Roughly 10–25 mg of caffeine per 200 ml cup. Store airtight, away from light; use within four months of opening.

From Morii Farm, Kizugawa, Kyoto

Every tea in our online shop comes from one farm. Morii Farm is a small family farm in Kizugawa, in the hills of southern Kyoto Prefecture next to the Kizu River, run by Masakazu and Tomomi Morii, the fourth generation on this land. The slopes are steep and the gap between day and night temperatures is wide, which slows the leaves down and concentrates their sweetness. Since 2017 the fields have been managed without pesticides, chemical fertilizers, herbicides or animal manure; the only fertilizer is natural rapeseed cake. This is the farm's own practice, not a certification, and it is the reason our teahouse in Tallinn carries the family name.

Frequently asked questions

What is the difference between light and strong hojicha?

Roast level. The light roast (this tea, Kohaku) is pulled early and keeps green-tea flavour and a pale amber colour. The strong roast (Taiyo) is roasted longer, tastes of caramel and smoke and makes a better latte. Caffeine is low in both; the strong roast has slightly less.

What does hand-roasted mean?

The leaves are roasted in a pan by the farmer, in small batches, instead of in an automated drum. It allows the roast to be stopped exactly when the aroma peaks, which matters more for a light roast than for a dark one.

How much caffeine does light hojicha have?

Roughly 10–25 mg per 200 ml cup, a little more than the strong roast because less is lost in roasting, but still a fraction of coffee.

Can I drink it in the evening?

Yes for most people. If you are sensitive, choose the strong roast or brew this one shorter.

How should I brew it?

3 g per 200 ml, 80–90 °C, 45–60 seconds. Boiling water will not ruin it, but slightly cooler water keeps the green sweetness.

Is it good for cold brew?

Yes. 5 g per litre, 6–8 hours in the fridge; it comes out golden, nutty and sweet.

How fast does it ship, and what does delivery cost?

Orders ship within 24 hours from Tallinn, Estonia. Estonia: Omniva parcel locker €2.95, free from €50. Latvia and Lithuania: €4.95–5.95. Finland: Matkahuolto €7.95. Elsewhere in the EU: free shipping from €75. Pickup at Morii Teahouse, Kopli 16, Tallinn (Mon–Sat 12–21, Sun 12–20) is usually ready the same day, and you can taste the tea before you take it home.

how to make it.
  1. Measure. 1 tea spoon with 200ml water.
  2. Steep. Water at 80°C for 3-5 minutes. Cooler water pulls out sweetness, hotter water pulls out strength.
  3. Re-steep. The same leaves give two or three more cups — keep each steep a little shorter.
delivery and returns.

Free delivery in Estonia above €50 and in Europe above €75. Ships from Tallinn, Estonia. Estonia goes by Omniva parcel machine, Finland by Matkahuolto, Latvia and Lithuania by Omniva, the rest of Europe by standard delivery.

One of the best teas I have ever tried. The smoky flavour hits the palette differently. Definitelly recommend to everyone. Also the fact that it has little caffeine make is it my most favorite, I can drink 10 cups of it literally
